Tea varieties
What Is Oolong Tea?
Oolong is a broad family of teas that are partially oxidized, between green and black tea in processing. Some are light and floral; others are darker and roasted.

A family with a wide range
The level of oxidation is one reason oolong varies so much, but rolling, roasting, cultivar, and place matter too. The UK Tea & Infusions Association describes lightly oxidized and darker oolong styles rather than one standard flavor.
A tightly rolled oolong may look like small pellets when dry, then open into larger leaves in water. Give it enough room in a teapot or infuser.
Find the style that fits you
If you like fragrant green tea, begin with a lighter oolong. If you prefer warm, toasted notes, try a more roasted style. Brew a small cup according to the maker’s guidance and taste it plain before changing the method.
Many oolongs welcome more than one infusion. The later cups can shift in aroma and texture, so a single quick steep may not tell the whole story.
